Executive chef Manjunath Mural, (The Song of India, épicer) has won three consecutive Michelin stars at Singapore’s pre-eminent fine-dining institution, The Song of India.
Chef Mural’s lifelong dream and vision is to see Indian cuisine understood, accepted and respected in the same way as haute French cuisine.
Indian cuisine has a depth of history, tradition, ingredients and techniques, yet it is often kept to the ‘family-restaurant’ in many parts of the world. I have often asked myself why. My dream is to share my style in presenting Indian cuisine in a way which is relevant and exciting, and haute Indian cuisine will one day be as revered as haute French dining.

Calling his culinary style “Asian-Indian gastronomy”, Mural uses traditional Indian preparation methods and blends them with flavours from completely different culinary traditions. The result is a uniquely juxtaposed culinary offering. Famous examples include his Tandoori-marinated salmon in sambal with fresh pomegranate, or fish with lobster and mango-spiced caviar, or his spiced chicken roulade stuffed with baby spinach in a laksa-infused sauce.
